Brit Pub to open summer 2025

Cheers, Colorado Springs! Your local pub scene is about to get a bit more British. The Brit Pub, which previously operated near University Village, is set to reopen in summer 2025 just feet from the south end of the Switchbacks’ home turf at Weidner Field, 645 S. Sierra Madre Avenue. From the rich tones and textures to the bar and food menu, expect an authentic British experience.

According to co-owner Nova, a proper British pub is about more than just food and drink—it’s about community. “A pub back home is a space where you can sit and read a book, have a pint and feel at home,” he says. “We’re bringing that same experience to Colorado Springs.”

Classic British Fare

The Brit Pub will serve a menu of classic British comfort food, starting with golden, crispy fish and chips served with thick-cut fries and mushy peas. Steak and ale pie, packed with slow-cooked beef in a rich ale-infused gravy, will be another staple, alongside Sunday roasts with Yorkshire pudding. Those with a sweet tooth can finish their meal with treacle tart, sticky toffee pudding or Eton Mess, a British classic made of berries, whipped cream and meringue.

Early risers can tuck into a full English breakfast. And on Switchbacks game days, a grab and go menu will make it easy to snag a hand pie or sausage roll before heading to the stadium.

Behind the bar, expect a well-curated selection of English ales, ciders, gin, wines and proper English teas.

Meet the Team Behind the Brit Pub

The Brit Pub’s focus on authenticity is due to the team behind the new restaurant. The British Food Group has deep roots in hospitality and British culture — and one pretty fun Irishman.

Founder Steve Jones is originally from Macclesfield, Cheshire. He has a background in Adidas, Manchester United-affiliated sports travel, and e-commerce. He co-founded the Chippy, which had a faithful following thanks to its authentic fish and chips. But that restaurant closed in 2023 to make way for this new venture.

At the helm of the kitchen is Phil Griffin, executive chef and co-owner. A classically trained chef from the UK, Phil worked under Michelin-starred chefs Raymond Blanc, Eric Chavot, and Marco Pierre White. Locally, he’s known for his work with Northside Social, Till, Wines of Colorado and FO4R North.

General manager and co-owner Martin Troy is originally from Shankill, Ireland. He was a familiar face at Jack Quinn’s, where he served as general manager from 2017 until joining the British Food Group in 2023.

And rounding out the co-owner group is Nova who handles marketing and communications. You may recognize him from his three years as cohost of the FOX21 morning show, Loving Living Local. Originally from Bradford, West Yorkshire, Nova now hosts The Pub Talk on YouTube and co-hosts See You at the Show, a behind-the-scenes music podcast with Venu. Fun fact, Nova played keyboards in the Brit band Scars on 45, appearing on VH1 and The Jay Leno Show.

As any good English pub should, the Brit Pub has strong ties to a local football club. And being located at the same stadium certainly helps to keep things close with the Switchbacks FC. Stay tuned to their Facebook page @thebritpub for updates on future collabs with the team.

Codswallop!: Another New Venture on the Horizon

In addition to the Brit Pub, the British Food Group is launching Codswallop!, a British fish and chips takeaway spot in Old Colorado City. The opening date is still pending as final building and permitting are underway.
